Pancit Recipe
This is one of my favorite Filipino dishes growing up that includes noodles, meat, and veggies. It’s my Dad’s recipe, which as all good recipes passed on had no measurements and many variations. I made it in college and winter when I would feel homesick and missed my Dad’s cooking. I hope you enjoy this comfort food as much as I do!

Serves 8.
Ingredients:
- Package of rice noodles
- Pancit Broth (see separate list below)
- 1 onion chopped
- 4-5 cloves garlic minced
- 2-1/2 stalks celery chopped
- 4 carrots chopped
- Shrimp chopped (optional)
- Salt, pepper
- Patis (fish sauce)
- Green onion chopped
- Lemon juice
Pancit Broth Ingredients:
- 2 chicken breasts
- 5 cups water
- 1 bay leaf
- 2 cloves garlic smashed
- Pepper
- Salt
- 1/2 onion
- 1 stalk celery
Instructions:
- Soak rice noodles in cold water according to package directions. Drain and cut in half. Set aside.
- Create a broth by boiling the broth ingredients. Remove the chicken to a plate, shred by hand when it cools. Remove and discard used up veggies. Set aside remaining broth.
- Sauté for 10mins or until softened: onion, garlic, celery, carrots.
- Add back shredded chicken, maybe chopped shrimp (the shrimp will cook quickly with all the other ingredients). Season/taste with pepper, salt, patis.
- Add back the prepared rice noodles. Add a little bit of broth a half cup or so at a time until the noodles suck it all up while they cook.
- Season with soy sauce or patis (fish sauce) and black pepper to taste. Can garnish with green onion. Serve warm with fresh lemon juice.
