Family Time in April
Here are some glimpses from days at home and what’s going on with life right now. It’s also the middle of Soccer Season, and we spent Spring Break in Goblin Valley.
First Trimester
We announced our pregnancy to the kids, as I’ve been having food aversions and needing to go with whatever sounds good. I literally am obsessed with a food one day, and can’t stand to look at it the next day. Except, I always like avocados and mushrooms and chocolate. The goal has been to try to eat protein even though meats are hard for me, so beans and protein powder and peanut butter and eggs, and Fast Food when I give in to the craving. Here’s what I’ve been able to eat this month.

Some of the highlights have been: Sausage and Egg McMuffins, Eggs on Avocado Toast, Pizza with mushrooms and a side of asparagus and potatoes, Enchiladas, Strawberries and Fruit dip made with Greek yogurt and chocolate protein powder and honey, Ground Beef and Zucchini skillet, In-N-Out Burger with fries, Sheet Pan Protein Pancake with fruit and white chocolate, Baked Potato with toppings (beans, broccoli, bacon, cheese and greek yogurt).
Conference Weekend
I’m so glad we had a really good discussion in church about General Conference and I got to study the prophet’s talk about charity and virtue bringing confidence with God. That is my game plan of how I’m going to survive this crazy time. Jer made special Carne Asada with cucumbers and we had it with my cilantro lime sauce.

Easter & Jer’s Birthday
We tried to make Jer’s birthday special for him while he was so sick. I made spaghetti for dinner, and he was such a sport eating it but I’m pretty sure I overcooked the meat and ruined his favorite meal. Lily made banana bread instead of a cake, he seemed to really enjoy his new hiking shirt as a gift, and we made him fresh mango and sang to him with a banner for his room so that even when he’s isolated he can know that we love him.

Post-Recovery Hike
When Jer recovered at the end of the month, we were able to hike in our canyon where it was so beautiful and green. Being in nature can make everything better. He felt so much like his old happy self (he usually does when he’s able to be outside), and got to test out his new hiking shirt (which he loves so much he wants more haha).

Love, Kat
